Sheet Pan French Toast Breakfast

All you need for a full french toast breakfast is 5 ingredients, 15 minutes, and a baking sheet. This easy breakfast meal is perfect for one or two people and takes hardly any effort. The perfect kind of breakfast!

  • 6-7 large Eggs, divided ($0.56)
  • 4 slices Sandwich Bread ($0.16)
  • ½ teaspoon Cinnamon ($0.05)
  • ¼ teaspoon Vanilla Extract ($0.01)
  • 4 strips Bacon ($0.89)


  • Preheat your oven to 400 degrees F.
  • Lay 4 strips of bacon along the side on a greased large baking sheet.
  • Place the baking sheet in the oven for 5 minutes.
  • While the bacon is cooking, prepare your french toast mixture.
  • Whisk together the eggs, cinnamon and vanilla in a pie plate or shallow bowl until well blended.
  • Remove bacon from oven.
  • Dip a slice of bread in the bowl and evenly coat both sides.
  • Lay the four pieces of french toast along the opposite side of the baking sheet.
  • Place in oven for 5 minutes.
  • Remove the pan from the oven. Flip the french toast over so that the other side can be cooked.
  • Remove the bacon if it is cooked to your liking and let it rest on a plate covered with foil or leave it on the pan if you want it more crispy.
  • Crack 4 eggs in the center of the pan. Be careful as you apply the eggs to the pan as they might slide if your pan is bent.
  • Cook for an additional 5-8 minutes depending on how well done you like your eggs. 5 minutes will give you a soft yolk (over easy) whereas 8 minutes will be a "fried hard" result.
  • Remove the baking sheet from the oven and serve warm. Enjoy.

  • How to scale this recipe down to make french toast for one. To scale this recipe down all you'll need is two slices of bread, 2 slices of hashbrowns, and 4 eggs. 2 eggs will go into the egg mixture and two eggs will be cooked sunny side up. You will also only need ¼ teaspoon of cinnamon and a splash of vanilla. The cooking times and temperature will not change.
  • What types of bread work best for french toast. I normally grab regular sandwich bread and use that for french toast as we almost always have it on hand. That said, my all-time favorite bread to use is actually sliced sourdough like in my Sourdough French Toast recipe. It gives it an almost "buttermilk" taste that makes it feel restaurant-quality good!
  • How to store leftovers. Keep your leftovers stored in an airtight container in the fridge for up to 3 days. Reheat before eating. Leftover french toast can also be stored in an airtight container in the freezer for up to 3 months.
  • How to reheat french toast. You can reheat french toast by placing it on a plate and microwaving a slice or two at a time for a minute to a minute and a half. You can also place it in the oven at 200 degrees F for about 5 minutes.
