Cooking Sweet Potatoes on the stove is a fast and simple way to make candied sweet potatoes in no time flat. Finish them off in the oven with marshmallows for a fast sweet potato casserole or eat them from the pot as-is!
In a large pot (or 12 inch cast iron skillet), combine all of the ingredients over medium heat. Let the butter melt and then stir everything together.
Bring mixture to a boil and let simmer for 15 minutes uncovered until potatoes are soft. Stir occasionally to prevent burning.
Serve as is or place into a casserole dish and top with mini marshmallows. Broil for 1 minute until the marshmallows are toasty.
Serve warm and enjoy!

You can reduce the sugar by up to half for a less sweet side dish.
For less of a syrup you can also reduce the butter by half.
You can eat your sweet potatoes from the pot or place them into a casserole dish and top with marshmallows. Broil on High for 1 minute to toast and then serve. If using a cast iron skillet or oven safe pot, you can just skip the casserole dish part.
Yams and sweet potatoes are interchangeable in this recipe.
Leftovers can be kept stored in an airtight container in the fridge for 3-5 days. Reheat before serving.
