A super easy and delicious cherry chip cookie made from boxed cake mix is a great way to get your cookie cravings fixed up and satisfied. This recipe is simple and gives great soft and chewy cookies for very little work. Can't get much easier than that!
Preheat oven to 350°F. Line a baking sheet with parchment paper and set aside.
In a large bowl mix together cake mix, flour, eggs, and oil until smooth.
Scoop with a 2 tablespoon sized cookie scoop and roll into little balls. Place evenly on baking sheet spaced at least 2inches apart.
Bake for about 10 minutes until the edges are lightly golden brown.
Allow the cookies to cool on the baking sheet for about 5 minutes before transferring to a cooling rack.
Notes
Adjust the recipe when using cake mixes of different sizes. For a 15oz cake mix, add ¼ cup of flour to achieve similar results to a larger box.
These cookies have minimal spreading. To make smaller cookies, maintain a round shape on the baking sheet.
When frosting the cookies, flatten each mound by placing a small square of parchment paper or wax paper over it and gently pressing it down with the bottom of a glass.
Storage: Keep cherry chip cake mix cookies in an airtight container at room temperature for one to two weeks before freshness starts to decline.
To freeze the cookies, store them in an airtight container for up to three months. Thaw and enjoy by leaving them on the counter for about 15 minutes to reach room temperature.
