Grease and heat a skillet or griddle over medium high heat.
Separate your egg white from the yolk. Beat the egg white until stiff peaks form.
In a bowl, whisk together the flour, oil, baking soda, milk, vanilla, cinnamon, and egg yolk until smooth.
Fold in the egg white.
Scoop the batter by the ¼ cup and drop it onto your hot skillet or griddle. Cook until edges look done and bubbles form on the top. Flip and cook other side until golden brown.

Tips for fluffy pancakes #1 never squish the pancake with the back of the spatula as you're cooking it. If the outsides are cooking faster than the middle, turn the heat down. Tip #2 If you feel any resistance until the pancake when you go to flip it, it's not ready to be flipped. A perfectly cooked pancake will lift easily off of the pan and onto your spatula.You can make your own self rising flour by mixing 1 cup of all purpose flour with 1 ½ teaspoon of baking powder and ½ teaspoon of salt. Simply mix those ingredients together in a bowl and use as you would the self rising flour.
