Easter is just around the corner so make sure to try this mini egg fudge recipe soon! With just 3 simple ingredients this recipe is kid-friendly and easy to make.
Prepare an 8x8 baking dish by lining the inside with foil. Set aside.
Chop about 10 mini eggs into pieces and set them aside.
Add your white chocolate chips to a large microwave-safe mixing bowl.
Heat the chocolate for 1 minute.
Stir and return to microwave and heat in 30-second intervals, stirring between each until smooth.
Remove the lid and foil from the top of your frosting container and heat in the microwave for 30 seconds.
Stir the frosting and pour it into the melted chocolate.
Mix together until completely incorporated.
Stir in the mini eggs until evenly distributed.
Immediately pour the fudge out and into your prepared pan because it will set quickly.
Spread the fudge out into an even layer.
Top with your reserved mini egg pieces that you chopped earlier. Lightly press them down into the fudge to adhere.
Place the dish into the fridge to chill for at least 2 hours.
Remove the fudge from the pan by lifting up on the foil. Remove the foil from the fudge.
Slice the fudge into 1-inch sized squares and serve. Enjoy.
Notes
Substitutions
White chocolate chips. You can swap out the white chocolate chips for dark chocolate chips, semi-sweet chocolate chips, milk chocolate chips, or a combination of any of them for a richer chocolate flavor experience.
Frosting. If desired you can use canned chocolate frosting or any other flavor you may want to use. I recommend sticking with vanilla or cream cheese flavor because they are ideal for creating a rich and creamy flavor perfect for Easter.
Variations
For more easy Easter fudge ideas, you can add in additional candies like jelly beans, Easter sprinkles, chopped Cadbury creme eggs, or whopper eggs. This is a great recipe to help you use up any leftover Easter candy!
You can change up the flavor of the fudge by adding in a little (like ½ teaspoon or less) of peppermint extract, orange extract, or other extract flavors. Adding in crushed freeze-dried berries would also help to add a nice contrast to the rich fudge flavors.
Recipe Tips
You can make it in just a microwave and bowl for a super simple recipe anyone can make. If desired you can melt the chocolate in a double boiler or in a pot over very low heat on the stove.
After an hour in the fridge, you will be able to cut the fudge into squares but the fudge will be very soft in comparison to the chocolate candies. After 2 hours the fudge will be more firm. Ideally, you will want to wait about 3-4 hours before serving.
Storage
Keep this fudge stored in an airtight container for up to 1-2 weeks in an airtight container in the fridge. You can keep it in the fridge for easy storage or after the fudge has been fully set, you can keep it at room temperature if you don't want it kept chilled. It will only last about 3-5 days at room temp.
You can freeze this easy easter fudge recipe! Simply cut it into serving-sized squares and then place wrap it well in plastic wrap before placing it into an airtight container or freezer bag.
