These keylime cookies are packed with citrus flavors and taste great. The Soft shortbread-like cookie dusted in powdered sugar makes them an incredible treat that you won't want to share!
Preheat oven to 350 and prepare baking sheet with cooking spray or parchment paper.
In large mixing bowl cream butter and sugar. Add in the eggs and mix again until well combined.
Stir in the lime juice and zest.
In a separate bowl, combine flour, baking powder and salt. Mix it into the creamed mixture. Place dough in fridge for 1-4 hours or take the faster method.
FASTER METHOD: Keep your hands dusted with flour to avoid dough from sticking.
Form the dough into ½ inch balls and arrange on a baking sheet. They don't spread much, if at all.
Bake for 10 minutes in the oven and when they're finished, place them on a cooling rack.
In a small bowl, mix your ½ cup of powdered sugar and lime juice until smooth. Brush over the tops of the cookies.
In a bowl or plastic baggie, place some more powdered sugar (about a cup should be good). Add your cookies, a few at a time, and gently toss them in the powdered sugar. Place them back on the rack or on a plate and enjoy.

The dough for this lime cookie recipe is pretty wet when it's finished and there are a few different ways that you can handle it.
You can choose to place it in the fridge for a few hours to harden enough to roll and place on a baking sheet.
You can choose to make them drop cookies. Or you can coat your hands in flour and roll the dough while it's wet to make them immediately without waiting and to get them into smooth little balls.
You can use regular limes instead of key limes, but the flavor won't be as incredible. Key limes are small and require a lot of added work, but the flavor is so much tastier when baked.If you can't get enough key lime juice to fulfill the recipe requirements, you can use bottled lime juice to fill in the difference.
