Mini bagel pizzas are a fun lunch or snack option that everyone can enjoy. Made with mini bagels, pizza sauce, cheese, and pepperonis, every bite is a soft and chewy pizza that tastes like nostalgia.
Preheat oven to 375 degrees F and line a baking sheet with parchment paper.
Split each bagel in half and arrange them to fit on the baking sheet.
Spoon about 2 tablespoons of pizza sauce onto each half and use the back of a spoon to spread it around over the top of the bagels.
Top the sauce with about 2-3 tablespoons of shredded cheese.
Add mini pepperoni if desired. I like to add about 5 because it gives roughly 1 per bite.
Bake in the oven for 10 minutes until cheese is nice and melted.
Let cool about 5 minutes before serving because it will be hot.
Notes
Use mini pepperoni for less mess when eating.
Preheat oven to 425°F and bake bagels for 5-10 minutes. Alternatively, bake at 375°F for about 10 minutes. Adjust to your desired cheese meltiness and bagel doneness.
For a quicker option, microwave the mini pizza bagels for about 45 seconds on a microwave-safe plate.
To freeze, assemble them, place on a baking sheet, and freeze for about 2 hours. Then store in an airtight container for up to 3 months. No need to thaw before baking; adjust cooking time as needed.
