The Holiday Peace Pie

Three flavored pie

Keeping the peace during the holidays by offering you three pie flavors in one round pan. Now there’s no fighting, and just one dessert to please the masses.

I originally wanted to make sheet pan pies for the holidays but couldn’t come up with a 4th flavor after I had already made a cheesecake. (We aren’t cherry pie fans around here). So we only had 3 flavors that we wanted.

From that this simple pie was created. We called it a peace pie based on its peace sign shape.

For our family of 4, it was really cool getting our favorite flavors in one dish. Even better knowing I didn’t need to make 3 whole pies for our small family to eat.

Apple Pie Filling

Tips for making holiday pie

Making this pie involves quite a few steps, but it’s actually a lot easier than it looks. Luckily, this allows you to prepare several fillings at the same time with ease.

When making the apple pie filling, you can use any baking apples of choice. I used granny smiths because I love the tartness and crisp bite of a good granny smith apple pie.

With the lemon meringue, the pudding/custard filling is prepared on the stove. Make sure it is a good thickness before letting it cool or else it may not set up right.

You will NOT need all of the pumpkin pie filling, in fact using all of it will result in a longer bake time. Only use half of it, at best. I have a fun tip in the notes section of the recipe card showing how to use the leftover pumpkin mix and pie crust.

The graham cracker walls will do a great job at separating the flavors, using small pieces of dough to fill in gaps is great as well.

You can choose to cut close to the Grahams and toss them away or cut a little extra pie on either side and allow a less picky eater to enjoy them. I’m sure we all have someone at our holiday table that doesn’t mind food mixing (usually a grandparent, am I right?)

FAQs about Peace Pie

How do I know when pumpkin pie is ready?

Pumpkin pie filling, once baked should be slightly jiggly, set around the edges, and pass the “clean knife test.” By inserting a knife into the middle of the filling, it should come out cleanly.

What apples are best for pumpkin pie?

Baking apples are best! Granny Smith, Honeycrisp, Braeburn, and Pink Ladies are a few great options to choose from.

How long is pie good for?

This pie is good for about 3 days in the fridge if stored in a covered container.

How to Make Holiday Peace Pie

Make pie fillings as directed and allow to cool. Placing too hot of fillings into the crust will cause a soggy crust.

Press one crust into the bottom of a pie plate.

Stand your graham crackers up and press down slightly to adhere to the crust. You will need to break the grahams to make them touch side to side in the pan.

Cut off the excess crust around the pie plate and use that extra bit of crust to fill in gaps around the grahams so that fillings don’t leave their portion.

Fill one section with apple pie filling, one with half of the pumpkin filling, and the other with the lemon filling, topping it off with the meringue.

Cut a few strips off of the second pie crust and use it to top the apple pie. Brush with an egg wash if desired.

Bake at 350 degrees F for 50 minutes. You can loosely tent the meringue with a greased piece of foil to keep it from browning too much after the 30 minute mark.

Remove from oven and allow to cool.

Trim off the graham cracker portion above the pie.

Slice and serve.

Ingredients

  • 1 box store bought pie crusts (2 per box)
  • 3-4 long graham crackers

Apple Pie Filling

  • 2-3 apples, sliced thin
  • 1/4 cup sugar
  • 1 tbsp lemon juice
  • 4 tbsp butter
  • 2 tsp flour
  • 1 tsp cinnamon

Pumpkin Pie Filling

  • 1 1/2 cup pumpkin puree
  • 1/2 cup milk
  • 1/2 cup sugar
  • 1 tsp pumpkin pie spice
  • 1 large egg, beaten

Lemon Pie Filling

  • 3 large eggs yolks, beaten
  • 3/4 cup sugar
  • 2 tbsp cornstarch
  • 2 tbsp flour
  • 1 cup water
  • 6 tbsp lemon juice
  • 3 tbsp lemon zest
  • 1 tbsp butter

Meringue

  • 3 large egg whites
  • 1/4 tsp vanilla
  • 1/4 cup sugar

Instructions

Apple Pie Filling

  • Melt butter in a skillet over medium heat.
  • In a bowl, toss the sliced apples with sugar and lemon juice.
  • Add apples and sugar mixture into skillet and cook until the apples are soft. About 10 minutes, stirring occasionally to avoid burning.
  • Add in the remaining filling ingredients and mix until thick and gooey.
  • Remove from heat and let cool.

Pumpkin Pie Filling

  • In a bowl, mix together all of the ingredients well.
  • Remove 1/2 of the filling (see note for ideas to use it up) and save the remaining 1/2 for the peace pie.

Lemon Filling

  • In a saucepan, combine the flour, cornstarch, and 3/4 cup sugar over medium heat.
  • Add in the water, lemon juice and lemon zest. Whisk to combine and bring to a boil.
  • Slowly blend the egg yolks into the mixture while whisking vigorously. Add in the butter and cook until thickened while stirring to help keep from clotting.
  • Remove from heat and let cool.

Meringue

  • In a bowl, beat your egg whites on high for 2 minutes.
  • Add in sugar and vanilla and beat again until stiff peaks form.

Assembly

  • Press one thawed pie crust into the bottom of a deep dish pie plate.
  • Stand the graham crackers in the pie plate arranged into 3 sections of similar size. You will need to break some graham crackers to make them fit.
  • Cut off the excess crust around the pie plate and use that to fill in any gaps in the graham crackers and to secure the edges where it meets the sides of the plate.
  • Fill one section with the cooled apple pie filling. One with half of the pumpkin puree mix and one with the lemon filling. Top the lemon filling with meringue.
  • Cut some strips of pie crust from the second pie crust in the box and top the apple pie section with it. Brush with egg wash if desired.
  • Bake in a 350 degree F oven for about 50 minutes. You can use a greased piece of foil to top the meringue (like a tented piece) to keep it from browning after the 30 minute mark.
  • Remove from oven and allow the pie to cool.
  • Trim down the graham cracker walls, slice and serve. Enjoy.

Notes

You will only need 1/2 of the pumpkin pie filling, and a portion of the 2nd pie crust. I recommend cutting out circles from the crust, pressing them into a muffin pan and filling with roughly 1/4 cup filling in each. Bake at 350F for about 30 minutes and you can have 6 mini pumpkin pies to enjoy.
