- Preheat your oven to 450 degrees F and line a baking sheet with parchment paper or foil. Set aside.
- Slice your zucchini and yellow squash into ¼ inch thick rounds and then slice each one in half.
- Place the zucchini, yellow squash, gnocchi, turkey sausage, and onion onto the baking sheet.
- Drizzle with olive oil.
- Top with minced garlic and seasonings.
- Toss everything together to coat it well. Spread the mixture out evenly into a single layer on the pan.
- Bake in the oven for 10 minutes.
- While it's baking, slice the cherry tomatoes in half.
- Remove the baking sheet from the oven and sprinkle on the cherry tomatoes. Bake for an additional 10 minutes.
- Serve warm and enjoy.
🧾 Substitutions
If desired you can omit the sausage or swap it out for another variety of similar style meat. I used a long link of smoked turkey sausage from Walmart but other flavors or meats like pork or chicken could work just as well.
I do not recommend swapping out the cherry tomatoes for small cut Roma tomatoes or other big tomato varieties because they won't hold up as well in the baking process due to the excess moisture. You can however use grape tomatoes or another small tomato variety.
📖 Variations
This crispy sheet pan gnocchi would be great with some added bell peppers, thinly sliced like the onions. My family isn't a big fan of bell peppers so I omitted them but the flavors here would be great for green or red peppers. You'll want about ½ of one if you plan to use them.
Sweet potato or butternut squash cut into about 1-inch sized cubes can be added to this recipe as well. Use about 1 cup of either one and make sure to add it in the beginning so that the pieces can be well coated in oil and seasonings.
🍴 Recipe Tips
The red pepper added to this recipe will give it a kick. If you do not like spicy foods, please omit this. If you like your food spicy, try it and adjust by adding more or less to your own tastes the next time.
I originally used ¼ teaspoon of it for this recipe but my kids and husband agreed that it was too much of a kick so I scaled it back to a pinch (⅛ teaspoon).
I purchase my gnocchi from the local dollar tree because I find that the containers are the same price at half the cost of my local grocery store. I almost always keep a package two in the pantry for quick dinners (I use them like dumplings in soups).

The leftovers from this dish can be saved in an airtight container in the fridge for up to 5 days. Just reheat when ready to eat.
While you could microwave this dish to get it warmed up quickly, you will lose out on some of that added crispness from cooking it on the stove or in the oven. I suggest cooking leftovers in a large skillet with just a teaspoon or so of olive oil to prevent sticking. Cook over medium heat until heated through.
First, make sure that the gnocchi you are using is 100% vegan as some often contain dairy or eggs. Next, swap out the turkey sausage for vegan sausage. Then just make and bake as directed.

- 1 small/med yellow squash ($0.89)
- ½ cup thinly sliced yellow or white onion ($0.35)

- Can add up to 1 cup of 1inch diced and peeled butternut squash or sweet potato. Add with everything in the first few steps so they get coated in oil and seasonings.
- Omit or reduce red crushed pepper if you don't want a spicy kick (increase to ¼ teaspoon if you want it spicier).
- I purchase my potato gnocchi from my local Dollar Tree (and have for years) because it's cheap and decent quality.
