Ingredient Notes:
Cherry tomatoes- Use red cherry tomatoes or colorful grape tomatoes. Either way, they'll add color and tangy goodness to the meal.
If you still have cherry tomatoes to use up I highly recommend trying them in our Tilapia with Spinach and Tomatoes, Scrambled Eggs with Spinach and Tomatoes, or Homemade Hamburger Helper.
Summer squash- You will want to use a combination of yellow squash and zucchini so that you get delicious seasonal flavors and some colorful variety.
Smoked turkey sausage- We like to use smoked sausage, but you can use kielbasa or other sausages instead.
Potato gnocchi- We get our gnocchi from Dollar Tree, so it's pretty cheap. That said you can use any gnocchi variety or brand based on what you'd like.

Feel free to omit the sausage if preferred or substitute it with a similar style meat of your choice. While I opted for smoked turkey sausage from Walmart, other varieties like pork or chicken sausage would be suitable replacements.
However, I advise against substituting cherry tomatoes with larger varieties like Roma tomatoes, as they may not hold up well during baking due to excess moisture. Instead, consider using grape tomatoes or other small tomato varieties for best results.

Customize Your Gnocchi
To enhance the flavors of this crispy sheet pan gnocchi, consider adding thinly sliced bell peppers alongside the onions. While my family prefers to skip bell peppers, green or red peppers would complement the dish well. Aim for about half of a pepper if you choose to include them.
You can also incorporate sweet potato or butternut squash, diced into 1-inch cubes. Add approximately 1 cup of either vegetable at the beginning of the recipe to ensure they are evenly coated in oil and seasonings.
🔪 Instructions for Sheet Pan Gnocchi With Sausage and Vegetables
Step 1: Preheat your oven to 450 degrees F and line a baking sheet with parchment paper or foil. Set aside.
Step 2: Slice your zucchini and yellow squash into ¼ inch thick rounds and then slice each one in half.
Step 3: Place the zucchini, yellow squash, gnocchi, turkey sausage, and onion onto the baking sheet.
Step 4: Drizzle with olive oil.
Step 5: Top with minced garlic and seasonings.
Step 6: Toss everything together to coat it well. Spread the mixture out evenly into a single layer on the pan.
Step 7: Bake in the oven for 10 minutes.
Step 8: While it's baking, slice the cherry tomatoes in half.
Step 9: Remove the baking sheet from the oven and sprinkle on the cherry tomatoes. Bake for an additional 10 minutes.

The red pepper in this recipe adds a kick. If you prefer mild flavors, feel free to omit it entirely. For those who enjoy spicy food, start with ¼ teaspoon and adjust to taste next time.
Initially, I used ¼ teaspoon, but found it too spicy for my family's liking. I reduced it to a pinch (⅛ teaspoon) for a milder flavor.
🍳 Reheating
While you could microwave this dish to get it warmed up quickly, you will lose out on some of that added crispness from cooking it on the stove or in the oven. I suggest cooking leftovers in a large skillet with just a teaspoon or so of olive oil to prevent sticking. Cook over medium heat until heated through.

First, make sure that the gnocchi you are using is 100% vegan as some often contain dairy or eggs. Next, swap out the turkey sausage for vegan sausage. Then just make and bake as directed.
