    Rainbow Rice Krispie Treats

    Bring some color to your day with these rainbow rice krispie treats. Made from rice crispy cereal and fruity pebbles, we get a flavorful colorful square of chewy marshmallow goodness.

    These colorful rice krispie treats are a delicious blend of traditional rice krispie treats, and Fruity Pebbles Treats in one! The results are chewy cereal treats with rainbow colors scattered throughout every piece.

    When I made these rainbow rice Krispies, they didn't last long at all. The kids went crazy for the bright rainbow colors and thought they were so much fun they asked for me to make them again soon.

    I got a bigger reaction from these rainbow rice crispy treats than I did when I made Rice Krispie Treats with Chocolate Chips! Which is almost unbelievable if you knew how much my kids loved chocolate, haha.

    Why This Recipe Works

    1. They're easy to make. While we do add in a second cereal, we don't add in any extra effort or steps. Rainbow crispy treats are just as simple and basic to make as any other variety, and that's just one more reason to love them!
    2. They're flavorful. Thanks to the fruity pebbles we get a little bit of fruity flavor incorporated into every bite, giving us a nice change of pace from the basic vanilla marshmallow flavor you'd usually get.
    3. The kids love them! You may want to double this recipe and make it in a 9x13 baking dish if you have crispy treat loving kids like I do. These squares are really hard to resist (not like you'd want to), but having extra pieces means that you can save some for later too.

    🥘 Ingredients

    Butter- You will need butter for helping to melt down the marshmallows and to grease the inside of the baking dish. You can use salted or unsalted butter.

    Mini Marshmallows- Use white mini marshmallows for the Krispie treats. Any brand is fine.

    Rice Krispie Cereal- You can use name brand or off brand rice crispy cereal, and the result will still be fantastic.

    Fruity Pebbles Cereal- This is what gives us the fun rainbow colors in every slice!

    🔪 Instructions

    Check out how to make rainbow rice krispie treats with these simple step-by-step instructions:

    Grease the inside of an 8x8 baking dish with some softened butter and set aside.

    Add your butter to a large pan over medium or low heat.

    Cook until the butter has melted.

    Stir in the mini marshmallows.

    Cook until dissolved. Stirring occasionally. Remove from heat.

    Add in the rice crispy cereal and the fruity pebbles cereal.

    Mix well to combine.

    Pour into your prepared 8x8 baking dish.

    Press down to compact into the pan and create an even layer.

    Let rest for about an hour or so to cool and set.

    Slice into squares and serve.

    🍴 Recipe Tips

    Greasing your pan can be done with butter or nonstick cooking spray.
    When you press the Krispies into the pan, it really helps to have your hands greased too. This prevents it from sticking. So either rub softened butter on your hands or spray your palms with cooking spray.

    Another huge tip is to make them over medium/low heat. The lower the heat the longer it will take, but it prevents overcooking the marshmallows and allows them to turn out perfect and gooey. So this is also very important for avoiding brittle treats later.

    Allowing the cereal treats to cool for at least an hour will make them much easier to serve them up and slice as well. But a good trick to get them out of the pan is to line it with parchment paper so they come out easier and you don't need to slice them in the pan.

    🥣 Recipe Add-Ins

    For added fun, you can always drizzle some melted white chocolate over the cereal bars and top them with more fruity pebbles!

    You can add up to another cup of mini marshmallows (to make the ratio 1:1) if you would like your cereal treats to be more gooey and soft.

    ⏲️ Microwave Instructions

    • Place your butter into a large mixing bowl and heat in the micrwoave for about 30 seconds until melted.
    • Add in the mini marshmallows and heat again for 2 minutes, stirring midway.
    • Add in the cereal and stir together to combine.
    • Pour into your baking dish and let set. Enjoy!

    Room Temp

    You can store these Rice Krispie treats in an airtight container or zipper topped baggie for up to a week or two at room temperature. I recommend eating them sooner rather than later as they'll taste best when fresh.

    Freezer

    Krispie treats are very freezer friendly. To freeze your treats, place them in an airtight container or individually wrap serving-sized squares in plastic wrap before placing them in a freezer-safe container. Then freeze for up to 3 months. Thaw at room temperature before eating. They won't take long to thaw!

    💭 FAQs

    Can I use margarine for my rice krispie treats?

    Yes, absolutely! Simply use any margarine instead of butter and follow the recipe as requested. The end result should be a soft texture that tastes fabulous. Another great alternative is to use coconut oil instead of butter, but it will leave a coconut flavor behind.

    Why are my Rice Krispie treats hard?

    If you overcook, overstir, or overheat your marshmallows and butter then you can easily end up with hard cereal treats. I recommend cooking at a low to medium temperature. Slow might take longer but it won't overheat and stirring every once in a while keeps you from overworking the sugars too.

    Can I use salted butter for rice krispie treats?

    Yes, you could use salted butter or unsalted depending on your preference. While unsalted butter may keep the flavors true, a little salt from salted butter could really make the flavors pop and add a nice contrast.
